A traditional yeast with high fermentation that has a good balance between fruity esters and warming phenolic spices. The yeast will leave a little softness and become shiny if left long enough.
Suitable for Witbier, Grand Cru, Spiced Ales and other specialty beers.
Mitigation: High (70 - 75%)
Sedimentation: Weak
For best results, ferment between 18 and 25°C.
