WildBrew™ Philly Sour is a unique species of Lachancea selected from the environment by the University of Sciences in Philadelphia (Patent Filed PCT/US2018/043 148). During fermentation, WildBrew™ Philly Sour produces a moderate amount of lactic acid in addition to alcohol. The first yeast in the WildBrew™ range, Philly Sour is an excellent choice for creating innovative and light beers with beautiful acidity and notes of stone fruit. With its high attenuation and flocculation, as well as good foam hold, WildBrew™ Philly Sour is the ideal yeast for styles such as Berliner Weiss, Gose, American Lambic and American Wild Ales. In addition, its resistance to hops makes it suitable for Sour IPA.
